Sourcing & farming
We have oyster farms located in eight NSW estuaries: Hastings River, Wallis Lake, Shoalhaven, Narooma, Bermagui, Wapengo, Nelsons Lagoon and Merimbula.
We also source from 20 NSW estuaries from the top to the bottom of the NSW east coast as well as from Tasmania, South Australia and Western Australia.

Australian oyster farmers are world leaders in the co-management of environmental sustainability.
This presents an opportunity for our industry to build on this achievement by branding themselves as the most environmentally sustainable oyster growing region in the world.
We love seagrass. It is a habitat for fish and other marine animals, helps reduce erosion, improves water quality, is a good food source for fish and aquatic fauna, and it contributes to the umami flavour in our oysters.
In return, oysters feed on the microscopic plankton, bacteria and excess algae in the water allowing more sunlight to penetrate the water. Since sea grasses need sunlight to grow, this simple action by our filter feeding oysters promotes seagrass health naturally.
