Ponzu, Cucumber and Sesame Rock Oysters

Serve:

Serves 2 as an entrée

Ingredients:

12 Oystersmiths Sydney Rock Oysters, served on the half shell

120mls ponzu (you can find this is most Asian grocery stores)

1 Lebanese cucumber

1 shallot, finely sliced on an angle

Sesame oil, to drizzle

Method

Carefully drizzle 1 tsp of ponzu sauce into each oyster shell.

Using the finest side of your grater, grate the cucumber so it is finely shredded. Place a small amount of cucumber onto each oyster.

Add a few pieces of finely sliced shallots, and finish with a drizzle of toasted sesame oil.
